African Style Lamb Chops

Cordero estilo Africano

Remove any excess fat from the chops and place them in an oven dish.

Mix the oil and the rest of the ingredients together, pour over the top of the chops and refrigerate for three hours.

Roast on a medium heat and serve with rice.

Bring the milk to the boil and add rice, sugar and JUMBO stock cube.

Cover and cook on a low heat until the liquid is absorbed.

    700g lamb chops
    1 cup of olive oil
    1 tbsp. cumin powder
    1 tbsp. ground coriander
    1 onion, grated
    4 cloves of chopped garlic
    ½ tsp. black pepper
    ½ tsp. cayenne pepper
    1 JUMBO Lamb or JUMBO Jumbo stock cube

    Rice side dish:

    200g long grain rice
    900ml coconut milk
    ½ cup granulated sugar
    1 JUMBO Chicken stock cube
