Okra Soup

Sopa Okra

Chop the meat or fish finely.  Place in pan with water, add the onion and the JUMBO Fish tbps. Simmer for 15 to 25 minutes. Add the Okra and stir well.  Add the remaining ingredients, stir and leave to cook for a further 10 minutes.  Serve hot with inyan (pounded yam) or eba (cassava dumplings).

Preparation time: 10 mins, cooking time: 35 mins.

  • 1 1/2 Kg.  beef (or, optionally, fish or goat)
    1 cup dried langoustines (or, optionally, shrimp)
    1 Kg. Okra cut in pieces or pureed
    1 tsp dried and ground red pepper
    2 tbsp JUMBO Fish
    1 onion, chopped
    4 tbsp red palm oil
    Chopped spinach
    7 cups water
